Which foods contain Gluten?

Experts agree that food storage kits are an essential part of emergency preparedness. It is often agreed upon that many of the best foods to include are those that have a long shelf-life. Unfortunately, for those that are following a gluten-free diet, many of these foods are on the list of those to avoid. So what, exactly, is gluten?

Gluten is a storage protein found in some grains and not in others. Wheat, rye, barley and oats all contain gluten while soy, amaranth and buck wheat do not. Thanks to gluten, we have chewy pizza dough, dense bagels and bread that bends without tearing. People that have celiac disease, dermatitis herpetiformis or a wheat allergy are advised to follow a gluten-free diet.

Many people who follow a gluten-free diet do not consider it a ‘diet’ but, rather, a lifestyle change. A great percentage of the foods available to use in the grocery store contain gluten and it can be a rather intense undertaking to find foods that are gluten-free. Consumers who need or simply desire to make this lifestyle change must become experts at reading food labels.

To make it easier for those just beginning a gluten-free lifestyle, we have compiled a list of foods that contain gluten and should therefore be avoided:

Breads and Starches

- Muesli, farina, oatmeal and hot cereals like Cream of Wheat
- Bread crumbs
- Couscous, barley and bulgar
- Crackers and pretzels
- Pre-packaged rice or noodles
- Flours: wheat, white, gluten, graham, high protein, durum and pastry
- Kamut
- Oats, oat bran, rye and semolina
- Wheat germ
- Certain rice cakes, crackers and popcorn cakes
- Tortillas made of wheat or flour
- Foods containing spelt or triticale

Dairy

- Drinks containing chocolate: hot cocoa mixes, milk and other drinks
- Malted milk
- Processed cheese
- Certain ice creams, yogurts and puddings

Fruits and Vegetables

- Breaded vegetables
- Baby food containing fruits with added starch
- Cream soups
- Any jam, jelly or spread with thickeners added
- Certain pies and pastries
- French fries and flavored chips

Meat and Protein

- Any meat that is breaded
- Canned baked beans
- Casseroles that are made with pasta or flour
- Any deli or lunch meat made with processed vegetable protein
- Corned beef
- Imitation seafood or bacon

Soups and Sauces

- Canned or dried soup made with noodles
- Certain salad dressings
- Dips
- Canned gravies containing flour
- Rice syrup
- Some seasoning mixes and sauces

While we have tried to make this list as inclusive as possible, it would take pages to list each individual food. Some foods like pastas, for instance, may contain ingredients listed in the breads and starches category and should be avoided.

Be sure, when compiling your emergency food storage kit, that you keep this list of foods to avoid handy, especially if you are following a gluten-free diet due to medical reasons. With careful planning, you can put together a kit that will help you survive an emergency in the most healthy way possible.
